What are the benefits, and why should you drink it?

Why drink carrots as juice when you could just eat them? Whole carrots are much more filling because of all the fiber. But here’s the thing — absorbing all the nutrients and antioxidants from carrots in juice form is easier. According to Healthline, Medical News Today, and others, carrot juice has many benefits.

  • Stronger vision: The old adage has some truth to it! The beta carotene in carrots can help with eye health.
  • Boosted immune system: This comes from the antioxidants and Vitamin C in carrots.

Ingredients spotlight

Carrot juice requires only a handful of ingredients for big flavor. It’s a great way to reduce food waste and use carrots and fruits at their peak. Here’s what you’ll need:

  • Carrots: Use 1 pound or 2 ½ cups chopped. I like to peel them before blending. If you’re using a juicer, peeling first isn’t necessary.
  • Apple: Any type! I love green apples and always keep them around for smoothies.
  • Orange: Any type of orange works too. I used 1 large one.
  • Lemon: Lemon juice brings just the right brightness to the juice. This is required — don’t leave it out!

Variations: flavor add-ins!

There are plenty of other options to add pizzazz to your juice. Here are a few ideas to liven up your basic carrot juice:

  • Carrot ginger juice: Add 1 teaspoon peeled and grated ginger.
  • Carrot pineapple juice: Add 1 cup chopped fresh or canned pineapple. (You’ll get a larger yield with this addition.)
  • Carrot mango juice: Add 1 cup diced fresh mango.
  • Carrot pear juice: Use 1 pear instead of the apple.
  • Carrot cucumber juice: Add ½ cup diced cucumber. (Also try Cucumber Juice!)
  • Carrot celery juice: Add 4 celery stalks, roughly chopped. (Also try Celery Juice!)

Instructions for best results

Ready to get juicing? Here’s how to make carrot juice in a blender! Note: If you have a juicer, pass all the ingredients in the recipe below through your juicer.

  • Add all ingredients to a blender. Use ½ cup water to get things to blend, but not so much that it waters down the juice.
  • Blend on high until pureed and smooth. It will look like a thick smoothie at this point.
  • Strain! This is the important part. Strain the juice through a fine mesh sieve or a nut milk bag. You can also use a cheesecloth and squeeze it to strain out the juice. Discard the pulp, or see below for some uses.
  • Add lemon juice. Lemon juice adds just the right brightness to the flavor at the end.

What to do with the pulp

In all honesty, I usually throw away the juice pulp. (Gasp!) I admit, it feels wasteful to get rid of it. But honestly, there aren’t that many genius things to do with it. Here’s what you might consider doing:

Ingredients

Scale
  • 1 pound carrots (2 ½ cups chopped)
  • 1 large apple
  • 1 large orange
  • 1 pinch salt
  • ½ cup water
  • 1 tablespoon lemon juice

Instructions

  1. Peel and chop the carrots. Chop the apple, keeping the skin on. Peel the orange.
  2. Place the carrots, apple, orange, salt, and water in a blender. Blend on high until pureed and a juice forms.
  3. Pass the juice through a fine mesh sieve or a nut milk bag to strain out the pulp. Discard the pulp (or see ideas above for how to use it). Stir in the fresh lemon juice. Drink immediately or chill before drinking.

    Thanks for this great idea. We have an advanced daughter who got acne at 11. She is almost 5’8″. I’m 6’1″ and grew up on milk but that seems to impact her the wrong way. And let’s not forget carrots are economical at the store.

    Firstly this was a very easy recipe and I already had all the ingredients available.
    I just wanted to say that this juice was so tasty and refreshing (tastes better when ice cold). Yes it isn’t 100% smooth, even after straining, but I wasn’t expecting it to be smooth and actually enjoyed the little texture to it.
    My only Gripe is that next time I do this I think I will prefer to do it through a juicer (which I plan on purchasing) as it was a little too time consuming for me, perhaps I am just slow lol.

    But overall great recipe so you should all give it a go!

    Thank you for the recipe! I have a Vitamix and this just made baby food. I followed the recipe exactly. It tasted ok, but too thick. I added more water, frozen pineapple, and fresh ginger. After stirring in lemon it was better, but foamy. It’s in a container in fridge hoping it will separate a bit. No pulp to strain. I’m a newbie & will try just carrots and water next time.
    Going to try the carrot fries also in my Ninja Foodi. Excited to see the link!

    For the life of me, I can’t understand why would anyone throw away the pulp. That’s the most nutritious content containing rich fibre and lowers blood sugar, besides keeping one with fuller feeling.

    I make my own drink in blender been doing it since about 3 mo’s w some days skip I don’t throw pulp away I drink it lol and I s garbage compost lol .I’m 65 I lost weight I make carrot celery apple or kale celery blue berry’s I put season organic urbs I guess tumeric coriander cardamom tumeric I eat this stuff whole sliced of course when I have it I put 1/4 teaspoon of each than flax seed 3 ciniomon please advise me I do not know what I’m doing

      Hmm…. the title for me is just “Carrot Juice,” not “Carrot Juice, No Straining Required.” A tip I have learned is to read the recipe in its entirety before going out and buying the ingredients or attempting to make! That way you won’t make the mistake of wasting ingredients on a recipe that you’re not equipped to handle :).

      Anyway, this recipe was exactly what I was looking for. Thanks Alex!

      Hey pete good morning, i make juice as well. After u blend carrot in blender, u can boil the pulp on stove top for about 10 minutes, let it cool blend in blender add your condensed milk of choice lil nutmeg n vanilla to tadte.
